I have been thinking about summer! I looked in my pantry the other night and realized I had all the fixin's to do a quick and easy summer dessert: S'mores Pie!
Ingredients:
Graham Cracker Crust
For the chocolate filling:
2 cups chocolate chips (you can use semi-sweet or milk)
1/4 cup unsalted butter, chopped
1 cup heavy cream or heavy whipping cream
For the marshmallow topping:
2 egg whites
1/2 cup sugar
1/8 tsp cream of tartar
1 tsp vanilla extract
This pie has minimal ingredients and is super easy!
Chocolate filling:
Combine chocolate chips and chopped butter in a medium bowl.
Heat heavy cream in microwave until bubbling, do this in 20 second intervals so you don't scorch it.
Pour heavy cream over chocolate and butter. Let sit 1-2 minutes to melt.
Gently stir the cream/chocolate mixture until completely mixed.
Pour into pie shell.
Chill in fridge for 2 hours or freezer for 30 minutes - 1 hour.
Marshmallow topping:
Prepare this when you are ready to top your pie.
Heat 2 inches of simmering water in a pot on the stove.
In a heat safe bowl, combine the egg whites, cream of tartar, and sugar.
Place this bowl directly on top of the pot with simmering water.
Whisk constantly until sugar is dissolved (5-8 minutes)
Remove bowl from heat and whip on high speed until mixture has thickened and is very white.
Stir in vanilla just until combined.
Top your chocolate pie!
